In the fall of 2008, we started a blog to answer the question “How do I use your products?” We also wanted to communicate with you in an informal and convivial environment centered around something everyone loves… Food.
Thus followed many recipes and a new era in my life.
At night I trade my R&D lab coat for a chef ’s apron, and work at creating “Simple, yet delicious and nutritious recipes”. I know this sounds like an ad, but it really is what I set out to do.
At times I think of a recipe when I open the fridge. Occasionally I plan ahead (a pleasant surprise for Tatiana, always sure to make her happy), but I must say I often swing by the grocery store on my way home from work!
As soon as I’ve snapped a few pictures, jotted down notes about quantities, the recipe faces the panel of hungry and impatient experts: Delphine, Casimir, Siméon, and Tatiana, the grand judge! They are unsparing but fair—not everything I do is exciting.
The challenge for me is to keep track of what I’ve done, I do tend to drop the ball every now and then.
I know that some of you out there rely on precise instructions and measurements, but there are many variables when it comes to food: the freshness of the ingredients; whether they are in season or not and of course; personal preferences. With these recipes I suggest a way to cook in a lighthearted and spontaneous way. Use these as guidelines, and add your own “Je ne sais quoi.” After all, we’re not sending a rocket to the moon.

I really love your products. My worst problem is that they are so good, I put a bit on bread as I walk through the kitchen. Before I know it, I’ve finished a container of pesto.
Last night, I took the Lemon Confit, put some in a plastic bag and added capers, parsley, garlic, a bit of lemon juice, and a bit of lemon zest. I then marinaded 2 halibut fillets. The fish was cooked on the grill. It made a wonderful, quick, and very tasty meal.
