Chicken and green beans delight
Chicken and green beans? How common! According to Tatiana and the kids this is a winner! It is quite easy, quite tasty, and quite healthy! The proof is in the… empty plate. I didn’t make enough!
INGREDIENTS Serves 4
- 1 lb (450g) chicken thighs. Try my version, (post on this blog, how to grill chicken) but toward the end add the juice of half a lemon
- About 200 g (8 oz) al dente green beans cut in half
- Half a red onion, chopped (to be steamed along the green beans)
- 3 tbs (45ml) Le Grand 4 Nuts and Cheese Pesto
- 2 tbs (30ml) good quality! Balsamic vinegar
- 2 tbs (30ml) maple syrup or honey
- 2 tbs (30ml) tamari or soy sauce
- A handful arugula!
PREPARATION
- While the chicken sizzles into pure goodness, steam the green beans and the red onion (not too much)
- Once steamed, let the beans and onions drain in the colander
- In a bowl, mix the pesto, vinegar, maple syrup, and tamari
- Remove the chicken and cut it into strips
- Put it back in the pan (high heat!) adding the beans, onions and the sauce
- Stir for a minute or two, its doesn’t need to cook long, just enough for the flavors to blend together
- Sprinkle the arugula just before removing the pan from the heat -I mean 10 seconds!
- Let it cool a few minutes before serving
