While we wait for Spring Salad…
Spring… There is no way I will last until you come our way. Especially here in Montreal, it seems you go all over the place before showing up, and even then, when you arrive, you’re quite frail, often Old Man Winter kicks your butt…
Anyways, I have to pick my battles, not much I can do here… unless…
Spring Salad! (not spring mix!) Yes, at our finger tips and with -20ºc on a very precise thermometer it is wise to keep that little hat on, for purple ears are not yet in fashion…
This salad does warm the heart…
INGREDIENTS for 3 to 4 but then again it depends if it’s your only dish, or how hungry you are…
- 2 cups (500ml) quinoa (uncooked)
- 3 cups (750ml) cooked green beans, cooked, but still green and vibrant, not brown and dead!
- 3 cups (750ml) arugula
- Green and sliced olives, a generous handful
- 3 Tbs Le Grand’s 4 Nuts & Cheese Pesto
- The juice of one lime (roll it on the counter while pressing with your hand, it will help get all the juice out)
RECIPE/GUIDELINES
- Cook the quinoa and let it cool down..
- Cook the green beans
- Mix all of the ingredients together. You may want to add a little bit of olive oil and sea salt.
Yes it IS simple… THAT simple!
