Pasta & Smoked Salmon… With Sun-Dried Tomato Pesto

Pasta, aaaah Paaasta… I’ve had pasta so often and yet I still love it. Here’s the little story behind that love affair…
My friends and I were musicians and our band broke up, but that did not stop us from celebrating, actually it was the very reason we gathered. To forget that cold world, so cynical, so blind to real talent… I wasn’t the best musician but I could cook from scratch pretty decent meals. The little money we had usually went to wine. We were broke but it didn’t stop us from being picky… Pasta was a natural, but I had to vary recipes all the time to make it interesting!
Sounds familiar? It’s still my challenge today …And I love it!
Have the gang over tonight, even though the world doesn’t seem as cynical as then… Well then, let’s drink to that!
In this recipe the goal is simple; to serve a ton of vegetables and call it pasta. Vegetables! The word sounds like… guilt and obligation! But they’re, oh so good for you! Let’s not praise blandness!

RECIPE/GUIDELINES
- 1/4 lb dry linguine
- 1 Smoked salmon
- 1 broccoli, diced
- 1 bag spinach, washed and finely chopped
- Around 20 Kalamata olives
- 1 ripe pear, chopped
- A few leaves of fresh mint, chopped; you can actually put quite a few in that mix, their voice is soft so you want a little bit of a choir…
- 3 Tbs (45 ml) Le Grand’s Sundried Tomato Pesto
- 2 Tbs (30 ml) Le Grand’s Mild Tapenade
- 1 garlic clove, crushed
- A little bit of olive oil, cold pressed of course!
- Cook the pasta, and during that time… Prepare the vegetables and the salmon
- Mix the Pesto, the Mild Tapenade and the garlic in a little bit of olive oil
- 3 min. before the pasta is done add the broccoli and save energy by cooking 2 things at once. Wow! Dont forget you want it dark green and still crunchy!
- Put all the ingredients in a bowl, with the spinach last
Add your drained broccoli and pasta on top of the spinach and toss without a hurry, this is a big mix, actually, get the strongest person in the room to do it. Hey! You’re in charge of the wine!
