Grand Grill Cheese with Red Peppers & Garden Pesto

Les Grands Grillcheeses! Poivron et pesto du JardinGrill Cheese. Sounds like “kid kind of food” to my ears!
Yet every time I have it I love it and I make a second and a… Third! My take on it isn’t traditional. Even though I’m sure I could open a joint on Route 66 and delight many truckers, none of them would realize that they’re wolfing down raw veggies and whole wheat bread… This magic trick was not shown to me by David Copperfield… But it works!
The only “trick” here is to make sure you have the right bread. I favor thick, crusty “country bread”, but no matter what type of bread you use, make sure it’s well toasted but not too crunchy. There’s lots of veggies and they can soak the bread. Also make sure your Mozzarella is thinly sliced. It will be packed with flavour, save those calories for… Dessert?

RECIPE/GUIDELINES

One slice of bread (country style)
1/4 red pepper cut in little cubes
1 belgian endive, (it has a neutral taste in this environment) diced
A nice slice of good country ham or turkey
2 THIN slices of Mozzarella
Chives or green onion, finely chopped!
Le Grand’s Garden Pesto, enough to cover the bread nicely!

Toast the bread and turn on the broil
Once the bread is toasted, spread it with Le Grand’s Garden Pesto
Add the endives, red pepper, chives and top it with cheese
Put it under the broil; you want to melt the cheese and maybe have a little golden hue but not more! Et Voilà! C’est simple!
